July 23rd, Sunday at 3pm (includes dinner): Class 1 Dr. Zeeshan Ali presents why diabetes begins and how it can be reversed through a low-fat, whole plant lifestyle.

Zeeshan Ali, Ph.D. works for the Physicians Committee for Responsible Medicine where he gives public lectures on diabetes and heart disease prevention through plant-based nutrition. Twice a year Dr. Ali travels to India to organize diabetes prevention and reversal events by collaborating with local organizations in India. His educational lecture will include the science behind the power of a plant-based diet and nutrition tips on chronic disease prevention.

Dr. Ali focuses on bringing traditional organic Indian food to the center of the plate. He will throw light on how lifestyle modifications in the past 20-30 years have resulted in increasing diabetes prevalence in the U.S., India, and China. Dr. Ali will discuss how diabetes rates can be dropped down by cutting down dietary fats and processed food. Learn how to reverse type 2 diabetes over a delicious Indian dinner.

July 30th, Sunday at 3pm (includes dinner): Class 2 is a cooking class where Munira Ali will prepare recipes using oil-free cooking techniques to provide nutritious healthy meals designed to reverse diabetes.

Munira Ali, B.Ed., M.A. is an independent contractor and community service project leader. She organizes cooking and nutrition classes to educate people about the importance of plant-based diets in managing diabetes, high blood pressure, cholesterol, obesity, and arthritis. She designs meals based on individual’s choice, culture, and physiological needs.

She specializes in teaching cooking classes to consumers with unique dietary needs and restrictions including SOS (sugar, oil and salt) Free, Gluten free and Vegan diets. "If two words will define my cooking style I would say Authentic and Traditional. To be specific, she grew up in a small town in the central India surrounded by lots of agricultural land and was brought up in a family which always tried to stick to the natural way of cooking, holistic approach and authentic Indian taste without adding artificial color or flavors. Her father used to get fresh vegetables every day from the local farmers market, while her mother used homemade seasoning and techniques to make their everyday food. She believes in her mother's theory of three T's, “that delicious Indian food needs time, technique and tossing of the right spices at the right time" says Munira Ali.

Besides giving individual and group lessons she also works on nutrition and cooking projects in collaboration with the Physicians Committee for Responsible Medicine, Vegetarian Society of DC, Food for Life instructors, religious organizations and community centers.
